Episode 19: Summer Vegetables

In summertime we see local vegetables everywhere: at the grocery store, in the back garden, farmer’s market or in a CSA (Community Supported Agriculture) share.  Sometimes there are so many vegetables, we just don’t know what to do with them.  I have the issue of having no air conditioning and thus cooking them can be a very hot experience.  This video shows a few recipes for the less often used veggies, prepared using less heat, including carrot top pesto.  Look for the recipes later this week.

    Great Post! It’s always a treat to have a great meal that didn’t cause the entire house to break out in a heat rash! Not to mention the nutritional boast of all those raw veggies. Thanks!

    In the summer, our gas stove inside gets a holiday. A few years ago I picked up a $50 large propane burner at an Indian spice shop, set it up on some bricks in the back yard, and we’re good to cook in the heat. Good for deep frying outside too. That said, raw and cold preparations are typically more appealing when it’s hot out anyway. Really like the dishes you chose – esp the quick pickle & slaw.

    Thank you for ending a long debate with a few of my co-workers over whether or not carrot tops are edible! Can’t wait to try this pesto.

    As for a previous comment about posting the recipes-I found the ingredients and prep pretty self-explanatory. I’d suggest that Mike get a pen and paper and try watching the video again.
