Baked Collard Greens

I haven’t put up a recipe in ages and for that I apologize. But since the last episode has some cooking, I thought I would share the collard greens recipe as it is super easy and delicious.

1 onion

2 Tablespoons butter

2 bunches collard greens

splash of white wine

1 cup heavy cream

1/2 cup parmesan plus 3 Tablespoons

salt

Preheat oven to 350

Sauté the onions in butter and salt until translucent. Add chopped collard greens. At this point you could add some pepper or other spices, but not necessary. My mom’s recipe calls for nutmeg, but it’s not really needed. Add a splash of white wine and cover to wilt the greens. Let cook for 5 to 10 minutes, stirring from time to time.  Taste the greens and salt accordingly.

In a seperate bowl, whisk together the, eggs, cream and 1/2 Cup parmesan.

When the collards cool a little, mix everything together.   

Butter a baking sheet and add the greens/cream mixture.  Sprinkle the additional parmesan on top and bake for 35 minutes.
