Delicata Squash and Watermelon Radish Salad

Here’s the recipe for Delicata Squash Salad as seen in Episode 38:

Serves 2

  • 1 Delicata squash (splash of olive oil, salt, pepper, honey)
  • Bunch of mixed herbs and greens
  • 1 watermelon radish
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Teaspoon Pumpkin Seed Oil
  • 1 Teaspoon Cider Vinegar
  • 1 Teaspoon Honey
  • A little bit of feta

Preheat oven to 450

Cut Delicata Squash into 1cm rounds.  Toss with olive oil, salt, pepper and a touch of honey.  Roast in the oven for 20 minutes or until caramelized

Toss greens with vinaigrette and salt.  Do the same to the radishes.  Serve with a sprinkle of feta cheese.
